Are these pastries all available every service day?
This is our Saturday preorder menu. On Thursdays and Fridays we do a little less variety. So, not all of these are available everyday.
We usually have a few extra cakes, pies, or tests that we are working on, on the table that is not on this menu.
Can I order these on the website?
No, sorry. This is just a visual menu for pricing, description, and picture if available so you can see what we offer in advance of in person purchase.
***Satruday preorders start at 7pm Sunday nights and close around 7:15/7:20 once we fill up.
***Friday preorder (much small menu) starts Thursday mornings around 5:30am to 9am.
Will some of these be sold out when I arrive?
Yes, depending on when you show up, some of these items may sell out as we bake fresh and bring to the table in small batch artisan bakery style.
***Saturdays, the tables will be fully stocked at opening with overflow waiting on racks.
***sourdough focaccia slices, pizza, and sandwiches usually come out around 11:15ish.
Why do I need to wait so long in line on Saturday?
Saturdays are a bit of a wait in line. We currently can afford 2 customer service people on the line with one register. On Saturdays we sometimes have an extra person to help out. But, we are a small team and if team members are sick, sometimes we have to pull that person to cover packing preorders.
We have a 3 hour service window on Saturdays compared to Thursday and Friday service windows (5.5+ hours). We do have some customers showing up at 9:30 to wait in line when we open at 10:35ish. We greet everyone and give everyone a brief info on how things work. We start serving around 11am. The bulk of the line arrives between 10-11. This is where a long wait starts to take form. We get it, long lines suck and we totally understand if you do not want to wait. This is how we have run our small batch bakery for 3 years and until we can afford to start our next phase of growth (yes there is a plan) then this system if what works best for us. We can understand that some customers see this as inefficient. But, we do keep getting busier every month so it seems to be working for most. And, until we can afford our next step this is how it will stay. Thursdays and Fridays are bit easier to navigate. Saturdays are for customers who are making a day out visiting us...an experience. We get made fun of bit for saying this, but we are anti corporate with creative backgrounds. We wanted to bring something unique to Indy. We never wanted to be a turn and burn fast food kind of place. We take extra care to hire friendly service people and we pay them $18+ an hour. We don't accept tips. We spend about 40-45% on food cost bringing you a huge variety of pastries with all high end ingredients. This is antithetical to making tons of money and having bigger margins as a business. We do this, because we love it and we really wanted to build something quality and give value to our community. So, adding a terminal or customer service rep is a big decision for us. It could put in a spot where we go back to not being able to pay our bills on time, like we were doing a few short 6 months ago. So, please be patient with us and keep all this in mind when visiting us. We are not trying to be complicated. We just want to create something special while surviving in this economy.
